5-minute Plant Powered Salad

Check out this quick, easy, nutrient-packed salad. Even with chopping the veggies, this delicious salad only took us 5 minutes to prepare. This plant-based power house salad is packed with polyphenols, which may help with training-induced inflammation. It is also a great source of vitamins A, C & K, as well as the mineral potassium. It is a perfect quick lunch or dinner to support your training and recovery.

 

Ingredients:

  • 1 cup triple washed organic baby spinach

  • 1/2 cup red cabbage, sliced thin

  • 1/4 cup cucumber, chopped

  • 1/4 cup bell pepper, chopped

  • 1/2 cup canned chickpeas, rinsed

  • 1-2 tablespoons hummus

  • 1-2 tablespoons Hemp Hearts

  • 1-2 tablespoons of your favorite salad dressing; a bottled version with a nice ingredient list is Brianna's Vinaigrette (www.briannas.com)

  • optional 1 oz feta cheese, crumbled


Instructions:

  1. Place one cup of triple washed baby spinach in a salad bowl.

  2. Top with sliced red cabbage, chopped cucumber & bell pepper.

  3. Add a few dollops of your favorite prepared hummus.

  4. Drizzle with salad dressing.

  5. Top with hemp hearts, and optional feta.
