Are you tired of paying for an overpriced breakfast sandwich? Maybe you just don't have the time to waste standing in line every morning to buy your breakfast. If that describes you, prepping these breakfast sandwiches is the perfect solution. You will end up saving time and money with this recipe. These Eggcellent Muffins are very filling with a great balance of carbs, fat, and protein.
5 English Muffins
1 cup of fresh spinach
5 slices of cheese (we like pepper jack)
5 slices of meat (we like ham)
1 tablespoon oil
Toast the muffin to your liking.
Meanwhile, heat pan to medium high heat with 1 tablespoon of oil for two eggs. Cook eggs to your liking. We like them over medium so they aren't too runny.
Add cheese to the toasted English muffin, and top cheese with a cooked egg patty .
Heat choice of meat in the same skillet you used for the eggs.
Top English muffin with spinach and then your meat of choice.
Let cool for 3-5 minutes then wrap in a paper towel and store in a container in the refrigerator.
When ready to consume, reheat while wrapped in the paper towel for 1-2 minutes.
