Eggs and sauerkraut are a magical combo with a protein + probiotic boost. Add a strip of bacon to really send this breakfast over the top. Depending on where you are at in your training cycle, you may want to include more carbohydrate. We suggest a slice of toast, a cup of sweet potatoes, or a cup of fruit to provide additional carbohydrates.
6 cherry tomatoes
1/2 cup fresh spinach
1/4 cup of sauerkraut
2 tablespoons olive oil
1 thick cut slice of bacon
sprinkle of everything bagel seasoning
Pre-heat the oven to 425 and place the bacon on a cookie sheet covered in foil. Then place the cookie sheet in the oven for 10-15 minutes, depending on how crispy you like your bacon.
Prepare your two eggs to your liking (we suggest over easy).
Add 1 tablespoon of olive oil to the pan.
Add cherry tomatoes, spinach and sauerkraut to the heated pan and cook for 3-5 minutes.
Place eggs, bacon, tomatoes, spinach and kraut on one plate. Sprinkle with everything bagel seasoning.
