The perfect side dish does exist! We are all looking for easy and delicious ways to include more vegetables into our diets. This recipe accomplishes just that. The preparation is as simple as chopping up some veggies and turning on the oven. If you are interested in keeping this recipe vegetarian or vegan, just leave out the parmesan cheese. 2 large zucchini, cut into quarters
10oz grape tomatoes, cut in halves
7 garlic cloves, crushed
1/2 cup Parmesan Cheese, shredded
1 teaspoon basil/thyme/oregano, dried
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup parsley or basil, finely chopped
Preheat the oven to 350 degrees and spray a baking dish with cooking spray. Set aside.
In a large mixing bowl, add all ingredients, except the parsley or basil, and stir to combine.
Transfer to the prepared baking dish and bake uncovered for 30 minutes. We recommend checking for doneness with a fork or knife after 25 minutes.
Remove from the oven, garnish with basil or parsley and serve.
